Inspirational gastronomic event Madrid Fusión returns for a 16th edition from 22 to 24 January. A theme of the “Fourth generation: those who own the future” shapes the three days of events tackling evolution and advancement.
This year’s world-class food congress will take place at the Palacio Municipal de Congresos, Campo de las Naciones in Madrid, where an impressive line-up of local and international chefs will gather to deliver food and wine tastings, workshops and demonstrations.
Leonor Espinosa, fresh from winning Latin America’s Best Female Chef, who will open the event with a talk about the concept of her latest menu “ciclo bioma.”
Elena Arzak will lead an “Imagination challenge,”
Joan Roca will discuss “The importance of origin”
Andoni Luis Aduriz on the “Opposite harmonies.”
Oriol Castro, Eduard Xatruch and Mateu Casañas of Disfrutar in Barcelona, the restaurant that won the One To Watch Award in 2017, will lead a workshop on “Jus, extracts and caramelisation.”
